It being autumn, I decided to try a sweet potato recipe, and since Chris and I both love ravioli, I found an easy recipe. Instead of making the pasta from scratch, I used wonton wrappers. The filling was a mixture of canned sweet yams, brown sugar, butter, and salt and pepper. I was worried that the ravioli wouldn’t stay together when I boiled it, so to seal it, I used beaten egg and kept the tray in the fridge for a couple hours. When I boiled it, it only took about five minutes. I served the pasta with grated Parmesan and lots of pepper.
The ravioli was really good, but it’s really sweet, so next time, I’ll definitely have a meat with it, like steak. It would work really well as a side dish.
